They are a great source of Vitamin A, C, and B6, dietary fibre, potassium, folate, niacin and calcium. Sweet Potatoes also offer the lowest glycemic index(GI) rating. That's because they digest slowly causing a gradual rise in, so you feel satisfied longer.

SWEET POTATOES STUFFED WITH VEGETABLES, OLIVE AND FETA
INGREDIENTS
2 small/medium size sweet potatoes
1 tbsp olive oil
1 Shredded carrot
1 Shredded red cabbage
1 Spring onion -sliced thinly
1 Shredded capsicum
80 g feta, crumbled
1/3 basil pesto
DIRECTIONS
- Preheat oven to 220 *C/200 *C fan-forced. Prick sweet potato all over with a knife. Place in microwave for 4 minutes, turn and cook for further 4 minutes.
- Place sweet potatoes on a lined oven tray. Drizzle with oil and bake for 30-40 minutes until tender.
- Grill the mixed vegetable separately (or Pan fry)
- Split the sweet potatoes down the centre with a sharp knife and ease open. Filled grilled vegetables into sweet potatoes. Top with feta, pesto and leaves(options-basil, rocket, spinach).

SWEET POTATOES STUFFED WITH PULLED PORK AND CHIPOTLE AIOLI
INGREDIENTS
2 small/medium size sweet potatoes
1 tbsp olive oil
1 Shredded carrot
1 Shredded red cabbage
1 Spring onion -sliced thinly
1 Shredded capsicum
200 g pulled pork
1/2 cup Aioli
2 chipotle chillies in abodo sauce
DIRECTIONS
- Preheat oven to 220 *C/200 *C fan-forced. Prick sweet potato all over with a knife. Place in microwave for 4 minutes, turn and cook for further 4 minutes.
- Place sweet potatoes on a lined oven tray. Drizzle with oil and bake for 30-40 minutes until tender.
- Combine all vegetables in a bowl.
- Split the sweet potatoes down the centre with a sharp knife and ease open. Filled vegetables into sweet potatoes, divide slaw and pork among potatoes. Blend aioli and chillies until smooth. Drizzle over pork.
- Refrigerate for at least 30 minutes before serving.
